Red Onion and Pomegranate Salad (Indian #6)

I have no idea if this is actually Indian but if it isn’t, it probably should be. It worked brilliantly as side to that Lamb and Spinach Curry together with some naan and rice and, according to Lizzie, it’s also great at barbecues. It’s not hard to imagine the sharpness and sweetness of this salad matching some smoky grilled lamb perfectly.

Red Onion and Pomegranate Salad (recipe from Hollow Legs)

Ingredients (serves 4-6 as a side)

2 red onions
juice of 2 limes
1 pomegranate
1/2 tsp cumin seeds
A handful of coriander
Salt & pepper

Slice the onions as thinly as possible and set aside. Cut the pomegranate in quarters and squeeze the juice into a bowl. Add the lime juice and the onions and let them marinate for 30 minutes. This will take away the onion harshness and save you from a unsociably stinky breath.

While onions are marinating, toast the cumin seeds and break them up in a pestle and mortar, or wrap them in a tea towel and bash them with a rolling pin. Pick the seeds out of the pomegranate, drain the onions and mix everything together. Add the chopped coriander leaves and season to taste.

Serve alongside a curry or in some pita bread together with some grilled meat.

Launceston Place, Kensington

I had been looking forward to visiting Launceston Place for a good few months; actually, since I saw Tristan Welch working his magic on Great British Menu. Starting the day with a massive hangover and a 3-hour journey to Kensington was probably not the best appetizer, but the weather was lovely and the short walk from the tube station helped the recovery process.

I have to say, I felt a little intimidated when we walked in, but the waiters were very nice and things got off to a good start when someone cracked a joke and got the sommelier giggling while taking our order for a lovely bottle of Rioja – I just wish I had managed more than a small glass.

We were also given some homemade crisps, tied up with a cute black ribbon, one for each person. We were having the 3-course set menu, so I was pleasantly surprised when a little amuse turned up soon after we ordered. It was a yoghurt sorbet with little pickled cucumber strips, which tasted, unsurprisingly, quite a lot like Indian raitha. It was nice.

For my starter I chose the beef and beetroot risotto, where beetroot bits were playing the role of the rice. It was served with some wild garlic foam, which was yummy and some bone marrow, which freaked me out a bit with its slimy texture, but Alex finished it off quite happily. The thin cured beef slices were absolutely stunning and I really could have eaten a lot more.

The other starter was probably the best dish of the meal. A perfectly poached goose egg, about which we talked for days after, was served alongside some toasted bread with mushroom pate and shaved truffle. There were two mushroom haters that ordered this and declared it a success, so I don’t think it can get much better than that.

My main was a perfect little cylinder of tender lamb, served with the creamiest mashed potato I’ve had in a while and some crunchy, minty stuff on the top. There was also some clear broth that the waiter poured on our plates, and I just felt sad that I didn’t have a spoon to scoop it all up.

After mains, there was another little surprise in the form of Pimm’s gelly topped with lemon and lime granita. Although my hangover wasn’t thankful about the extra alcohol, this little pre-dessert was absolutely yummy, just tart enough and perfectly summery.

I convinced a friend to share the Apple Tart Tatin with me, while everyone else had the Chocolate and Rasberry Mousse. They were both lovely, the tart was as good as they come, with sweet caramelised apples topping flaky puff pastry and served with some superb homemade clotted cream. The mousse was dark and intensely chocolatey.

We turned down coffee as we were planning afternoon tea soon after, but we were still offered a couple of pots of warm mini sponges and cream that were incredibly light and fluffy.

We spent a good few hours after the meal talking about how brilliant everything was and, at £20, it’s a complete bargain. The service was great, the waiters were attentive and we never felt rushed – a perfect lunch.

Rhubarb Tarte Tatin

You can never have too much of a good thing, they say. Well, that’s complete rubbish. It took me about 2 years to start drinking Earl Grey tea again after months of several cups a day and I still haven’t been able to recover a taste for baked potatoes with cheese.

And rhubarb? Well, I’m not quite sick of rhubarb crumble yet, but I’ve definitely had my fair share of it over the last year. It was time to try something different. You see, stewed rhubarb is alright, but rhubarb roasted in butter and sugar is a lot better. And you could top it with crumble, but why do that when you can have a flaky, buttery puff pastry base instead?

I first saw this on Masterchef, when Marianne cooked it and the judges absolutely loved it. It looked brilliant, but all the recipes I found on the internet used a frying pan to caramelise the rhubarb and then cooked it in the oven. My frying pans don’t really survive in the oven, and I was worried that if I used the roast-for-3-hours technique the rhubarb would disintegrate into a pink mushy mess. As it turns out, rhubarb does survive hours of roasting. And tastes amazing after.

Rhubarb Tarte Tatin

Ingredients

4 large stalks of rhubarb, chopped
100 gr butter, softened
150 gr caster sugar
a sheet of puff pastry

In a round pyrex dish, about 20 cm in diameter, spread the butter as evenly as you can and sprinkle the sugar on the top. Arrange the chopped rhubarb in circles, making the bottom as pretty as you can, as it will be on the top later. If you have any extra bits, cut them smaller and sprinkle them over the top.

Cover with foil and bake in the oven for up to 2 hours at 180 degrees, checking towards the end to make sure the bottom doesn’t burn. Roll out a sheet of puff pastry and cut it in approximately the shape and size of your dish. Place it on top of the rhubarb, tucking the ends in, and bake until the pastry is cooked.

Let it cool for a few minutes, place a plate on the top and quickly turn it upside down.

My pieces of rhubarb made a bit of a mess, but I quickly rearranged them and made it almost presentable. I loved the fact that there was some soft, juicy rhubarb but also enough caramelised bits too. The extra syrup dripped on the pastry and made the edges shiny and sticky. I served it with a scoop of vanilla ice cream.

Lamb and Spinach Curry (Indian #5)

I am failing pretty miserably at making this blog even slightly seasonal. For the last few days the sun has been shining and I have been getting more and more silly tan marks and yet here I am writing about curry, again. Knowing British weather though, I am pretty convinced that soon enough it’s going to turn cold again and therefore perfectly suitable to warm, spicy, meaty stews. When it does, make this curry.

Lamb and Spinach Curry (slightly adapted from Hollow Legs)

Ingredients (serves 4)

4 onions
2 tbsp oil (I used olive oil but maybe something else would be more traditional)
5 medium tomatoes, peeled*
25 gr ginger
3-4 garlic cloves
1/2 tsp red chilli powder

800 gr lamb shoulder, cut in chunks, most fat removed

200 ml creamed tomatoes (approximately, depending on how red and beefy the fresh ones are)
2 tsp turmeric
2 tsp ground cumin
2 tsp ground coriander
1 tsp salt
2 green chillies, sliced in half (without seeds if you prefer)

1 bunch of spinach (~100 gr)
100 ml water
1/2 tsp garam masala
chopped fresh coriander, to garnish

Slice the onions and cook them in the oil slowly, for about 20 minutes, until soft. In the meantime, mix the fresh tomatoes with the garlic, ginger and chilli powder and blend until smooth. Add the soft onions and blend again. Return into the (large) saucepan and add the chunks of meat.

Cook for a few minutes until the meat starts to brown, stirring occasionally and then add the creamed tomatoes, the turmeric, ground cumin, ground coriander, salt and the sliced chillies. Add enough water to simmer and let it cook for at least 2 hours, although more will make it better.

Towards the end of the cooking time, pour boiling water over the spinach until it’s just soft, drain and then blend it with the 100 ml water. Add the spinach puree and garam masala to the curry, let it simmer for a further 5-10 minutes and serve with some chopped fresh coriander.

* To easily peel the tomatoes, pour boiling water over them and leave them in it for a few minutes. Get rid of the water and peel.

So, this looks green. Maybe a bit too green to excite you enough to give it a go. But it tastes absolutely brilliant, with soft, meaty pieces of lamb falling apart and a very thick sauce, perfect for scooping up with some naan bread (which, by the way, I finally succeeded in making- recipe coming soon!). I also served it with some cucumber raita and an onion and pomegranate salad that I got off Hollow Legs and it’s an adapted Nigella recipe.

Hey, that’s me!

Very excitingly I am being profiled on one of my favourite blogs today, Londonelicious.

Although I live in Cambridge and cook more than I eat out, I do love reading about Krista’s London eating adventures. Her style is unique and entertaining and her blog a very useful guide when it comes to eating in London. I just have to stop myself from reading her posts sometimes as I get too jealous about all that great food and restaurants!

At the moment, most of it is cooking and baking, and I am trying to work my way through 100 new recipes from around the world, from 10 different countries. It’s slow, but it’s fun! Heston’s Chicken Tikka Masala (almost) (Indian #4)

I don’t know how I decided to make this for my Indian “month”. In a way, I’m not quite sure that Chicken Tikka Masala qualifies as Indian, as there different stories about where it was first created; most of them agree it was in the UK. Recently though, chefs in India have starting endorsing it and making their own versions; its appeal to the rest of the world hasn’t gone unnoticed.

Having lived in the UK for 7 years now, it’s a bit strange that I had never had a Chicken Tikka Masala before I made this version. I think I have made up for it though, since this isn’t any version: it is Heston Blumenthal’s recipe from his In Search of Perfection series. In the book, which is quite a good read even if you never cook from it, he describes how he built his own Tandoori oven and came to Cambridge to use an MRI scanner on some chicken breasts.

As you can probably guess, I didn’t follow all of the instructions.

Chicken Tikka Masala (adapted* from Heston’s In Search of Perfection)

For the rub:

4 bulbs of garlic
50 gr olive oil
50 gr ginger
5 gr salt
8 chicken thighs/legs, bones and skins removed and meat sliced into bite-sized pieces

Pop the garlic and ginger in the food processor and add the olive oil and salt to make a paste. Rub the chicken with it and place in the fridge for 3-5 hours.

For the yoghurt marinade

20 gr ghee
20 gr chickpea flour (or normal flour, or a mix with cornflour)
40 gr olive oil
8 gr chilli powder
350 gr Greek-style yoghurt
10 gr garam masala

First, make a roux by melting the ghee in a pan, adding the flour and frying for a bit until the flour is cooked. Put in a plate and let cool.
Then, fry the olive oil with the chilli powder for 2-3 minutes. Move to a bowl and mix together with the roux, the yoghurt and the garam masala (basically everything together!).

Brush most of the rub off the chicken and cover it in the marinade. Leave in the fridge for a few hours, up to 10 if possible.

Remove any extra yoghurt, place on a grill or baking tray and grill under a medium heat until cooked through with a few charred spots on the outside. While the chicken is cooking, prepare the sauce:

For the Masala sauce

5 gr coriander seeds
5 gr cumin seeds
1 kg fresh tomatoes (or good quality canned)
40 gr tomato puree
100 gr water
50 gr ghee
1/2 tsp chilli powder
2 onions, sliced
25 gr ginger, chopped finely
salt to taste
1/2 tsp garam masala
1/2 tsp turmeric

Toast the coriander and cumin seeds, add the tomatoes and water and cook until reduced. Strain everything through a sieve.

In a frying pan, melt the ghee, add the chilli powder and fry for 2-3 minutes. Add the onions, ginger and salt and cook until soft. Add the tomato puree, the sieved tomatoes and the turmeric and garam masala and simmer until the sauce thickens.

To assemble

the cooked chicken
the masala sauce
50 gr yoghurt
50 gr coconut milk
diced chilli (optional)
fresh coriander (optional)

Add the chicken to the sauce and simmer for 5 minutes. Take off the heat and stir in the yoghurt and coconut milk. Sprinkle with the chopped chilli and some fresh coriander.

The meat was moist and soft, with caramelised spots all over. Before I added it to the sauce I was thinking that you could easily serve it dry, with some cucumber raitha and naan bread. As it is normal with stews, the sauce was even better when we had the leftovers the next day.

I served it with this Aubergine in Yoghurt side dish, some rice and homemade pita bread.

This isn’t the original recipe (as it appears in the book) as I have simplified it to make it more home-cook friendly, so hopefully no one will get angry with me for putting it up here!  

Monaco Martini

Anyone who knows me knows that I have a tiny little obsession with Formula 1. Fast cars, cutting-edge technology, glamourous lifestyle and, erm, the drivers aren’t bad either. What’s not to like?

I had a half-chance to go to the Monaco Grand Prix this year, pretty cheaply too, but I couldn’t be away because I was graduating; although somehow I’m still a student. The only way to feel a bit of the Monaco glamour was to brave the post-graduation-party hangover on Sunday noon and make myself a Martini while watching the race.

I had this cocktail in Minneapolis, where Hendrick’s Gin seemed to be surprisingly popular, but I had already had a few g&ts by then and I can’t remember what it was called. I’m just going to call it My Monaco Martini and hope no one gets angry with me with some copyright issues. But if you do know the real name, or have a more exciting suggestion to make, please let me know in the comments.

My Monaco Martini

Ingredients

45 ml Hendrick’s Gin
25 ml Chambord
a squeeze of half a lemon

Shaken, not stirred, with some ice. Strain into a martini glass. Enjoy (responsibly).

A couple of notes:

  • If you haven’t got Hendrick’s use another gin, but make sure it’s a high-quality smooth one, since there will be no tonic to mask any harshness. I had run out of Hendrick’s so used Tanqueray 10 instead, but I still think it’s better with Hendrick’s.
  • If you haven’t got Chambord, use some other raspberry liqueur, but keep in mind that the end result might be different as this is made from black raspberries and it has a slight bitter aftertaste after the initial sweetness.

It’s surprisingly easy to drink given the amount of alcohol in it. You’ve been warned.

Aubergine in Yoghurt (Indian #3)

If this was a politics blog, I would have been busy all this time talking about all the big changes happening in the two countries I consider my home. It isn’t, and that’s why I’ve been silent. In real life, I mourned the loss of three lives, got angry at the violence of the police and worried about the future of a country that is “on the brink of the abyss”. In the meantime, the UK got a new government and I spent more than a few days complaining about not being able to vote. Not that it would have made much of difference anyway.

And after all that, I thought it was about time I put a recipe up here. If anyone still remembers, I do this thing where I pick a country and cook 10 different things from that country- provided I’ve never cooked them before. Last time I posted about this, I was doing India, and I promised some prawns. Well, guess what, I’ve gone back on my promise. But it’s ok, because this is better. Actually, it’s so good that I’ve already made it 3 or 4 times, and I thought it was about time I shared it with the world (well, actually, the BBC did that for me a while ago).

This is a very simple Indian dish, and apparently there exist other versions of it which use sour cream rather than yoghurt, but I thought I might as well keep it healthy. It’s a great side dish to any curry, or simply served with some Indian bread and/or rice.

Aubergine in Yoghurt (adapted from here)

Ingredients (serves 4 as a side)

2 large aubergines, thinly sliced into rounds
pinch of turmeric
pinch of salt
1/2 tsp red chilli powder
2 tbsp olive oil

200 ml Greek-style plain yoghurt
1 tsp sugar
1/2 tsp red chilli powder
1 tsp ground cumin

a handful of fresh coriander leaves, to garnish

To prepare the aubergines, mix the oil with the turmeric, salt and 1/2 tsp of chilli powder in a bowl, brush each side of the aubergines and grill until soft, turning half way.

At this point, you can slice them in half to make it easier to mix with the yoghurt later.

In a bowl, beat 150ml of yoghurt with the sugar and the other 1/2 tsp of chilli powder. Roast the ground cumin in a non-stick pan over low heat until the smell starts filling the kitchen. Add the yoghurt and continue to heat gently until it’s warm. Add the aubergine slices and the remaining yoghurt and stir to combine. Serve with some chopped coriander leaves.

Have it as a side to a curry, with some naan bread and rice. It works well cold too, wrapped in pita bread for a quick leftover lunch. You can adjust the amount and type (I use hot) of chilli powder to make it as spicy as you like. I like it with a bit of a kick, as the cooling yoghurt makes sure you don’t burn yourself too much.

Rhubarb and Pear Frangipane Tart

I wonder how many times other food bloggers make a dish, find a few minutes to take half-decent photos of it despite the urge to forget about blogging and just tuck in and then… just never write about it. I’ve got so many sets of photos that I was actually quite happy with, of food that tasted good and I still never found the motivation to put up here.

This is what happened with this one. I’ve made a Pear and Frangipane Tart and a Caramelised Pear and Almond Cake before but now I’m quite glad they never made it onto the blog. Because this is better.

You see, not only I made my own pastry, which already makes it a winner, it also contains alcohol, which is always a plus (even is such small quantities!) and it has an extra layer of goodness between the pastry and the frangipane: sweet and sharp rhubarb compote.

Now, I can pretend it was my culinary genius that made me put rhubarb in the tart but, in reality, I had half a bowl of the stuff leftover and I couldn’t possibly bring myself to eat any more rhubarb yogurt. And a bit like this, the Rhubarb and Pear Frangipane Tart was born!

I’ve combined several recipes that I have used in the past and I think this works quite nicely. The rhubarb is sharp, the almond filling sweet and nutty and the tart crust crumbly. If I could change one thing, it would be the way I prepared my pears. Next time, instead of just popping them on the top and drizzling with sugary butter, I’ll caramelise them first on the hob to make sure they are soft by the time the tart is cooked.

Rhubarb and Pear Frangipane Tart

For the crust (from Chocolate and Zucchini):

85 gr chilled salted butter
85 gr sugar
170 gr all-purpose flour
1 tsp white wine vinegar
1 tbsp cold milk

Combine butter and sugar in a food processor until light and fluffy. Add the flour and mix until you get a crumb-like dough. Add the vinegar and the milk and pulse to incorporate.

At this point the dough should have crumb-like consistency (check!), but clump if you squeeze it together in your hand (check!). And also, smell pretty disgustingly of vinegar (check…). I believed Clotilde when she said that the smell would disappear during baking and proceeded happily.

Empty the dough crumbs in a tart dish (or a cake tin which is what I did) and spread evenly along the bottom to form a crust. Keep some extra along the edges to mold it into a low rim. Do not worry too much about making it completely even. Blind-bake it in a 170 degree oven for 15 minutes and let it cool slightly.

For the rhubarb compote:

2 stalks of rhubarb, washed and chopped
a drop of red wine
dark muscovado sugar to taste

Cook the rhubarb and the wine on the hob until the rhubarb is soft. Add sugar to taste and continue to simmer until all lumps of rhubarb have been mixed in and you have a smooth paste. Spread evenly onto the pastry.

For the frangipane filling (adapted from here and here):

75 gr butter
75 gr dark muscovado sugar
75 gr ground almonds
1 large egg
2 tbsp flour
2 tsp Amaretto (alternatively, use a drop of almond extract or omit completely)

Mix all the ingredients together in the food processor or by using an electric hand whisk until smooth. I didn’t worry too much about a few small lumps of brown sugar. Spread on top of the rhubarb compote.

For the topping:

2 pears
50 gr butter
a sprinkle of sugar

Peel the pears and slice them in quarters, removing the hard middle bit. Keeping the thin top intact, slice them to the bottom and fan them out. Arrange on top of the frangipane. Melt the butter with the sugar.

Cook in a preheated oven for 15 minutes at 170 degrees, then take it out and quickly drizzle the melted butter over the pears to stop them from drying out. Place back in the oven and cook for a further 20 minutes or until the frangipane mixture is set and the crust golden-brown.

If you prefer, you can caramelise the pears in a pan before arranging on the tart and avoid the butter-drizzling half way into the baking. Or maybe ignore this step completely. The pears should be fine, especially if they were quite juicy to start with.

When it’s done, remove the tin’s ring and let the tart cool. You can serve it while it’s still warm but I find that the flavours improve after it’s cooled down. Serve with vanilla ice-cream or clotted cream. Even though I had already had quite a lot, I couldn’t resist a slice of it plain, with a cup of tea in the afternoon.

I know the recipe looks a little bit long but it really isn’t very complicated at all and it takes very little time. If you want to make it quicker you can use ready-made sweet shortcrust pastry, although making your own is pretty easy and the taste and texture is almost certainly superior to the store-bought. You can make both fillings while the pastry is blind-baking and cooling down, do your clearing up while the whole thing is baking and then you’re ready to enjoy a lovely slice of tart, sweet, nutty, fruity goodness.

(Healthy-ish) Spinach and Feta mini-pies

What do you do when you’ve spent three days eating huge amounts of spit-roast lamb for lunch and dinner?

Apparently, you find yourself ordering a crepe at that (life-saving) 24h sandwich shop. At 4 in the morning. I can’t even remember what was in there, but there was definitely cheese, chips (yeah, obviously) and mayo. And probably some meat.

Greedy.

I woke up with no hangover – thankfully all those calories didn’t completely go to waste. But I was really hoping to eat something slightly healthier and preferably green-coloured. I don’t think my mum has ever seen me so excited about spinach.

The recipe is of course quite vague, since this is how mum described it to me. Actually, her first sentence was “Make some dough” and she was not going to offer any further explanation. Thankfully she saw the blank look on my face and got the hint.

Spinach and Feta mini-pies

For the dough

500 gr all-purpose flour
2 tbsp olive oil
1 tsp salt
enough water to make a dough (~1/2 pint)

Simply mix the flour with the oil and the salt and then add water gradually and knead until you have a dough. You want it as wet as possible without sticking to your fingers or the bowl. Knead until smooth and let it rest. In the meantime, prepare the filling.

For the filling

200 gr spinach
6-7 spring onions
a bunch of dill
150 gr feta, crumbled
2 tbsp rice, washed
olive oil
a pinch of salt and some pepper

First of all, wash your greens and chop them up. In a big bowl, mix with the cheese and the rice. Add some pepper, a little bit of salt, depending on how salty your feta is, and drizzle with olive oil. Mix to combine.

By now the dough should be ready to be used. Cut off an apple-sized piece and place it on a lightly floured surface. You want to roll it out to a rectangular shape, a bit like in the picture below, but probably a bit thinner than mine. Make it thin enough so that you can just about see there’s spinach inside when you fill it and roll it up.

Add some of the mixture in the middle and then roll it into a long cylinder. Squeeze the ends of the dough to seal them and roll it in this kind of shape:

Brush top and bottom with some olive oil, place on a tray and cook in a preheated oven (180 degrees) for about 30-40 minutes or until golden brown. My mum turned them round towards the end, but I forgot to. Not sure how much of a difference it makes but you should probably do it anyway.

I think mine also needed a bit more cooking, but I was in a hurry. I reheated a couple the next day, and they were nicer, so leave yours until they look a bit darker than the ones on the picture.

I really love making a big batch of these and having them for lunch the next day too. You can also have them as a light dinner or serve them as a side to something meaty (in Greece we had them with some lamb – of course!).

You can add less authentic things in there too, like some kind of meat, diced finely. Just don’t skip the rice, it makes a big difference as it absorbs the liquid from the spinach and stops them from turning soggy.
